I'll have nutrition facts first, then recipe, then my thoughts on it Rough nutrition facts per burrito: 631 calories 18g fat 88g carb 33g protein w/o meat: 550 calories 15g fat 80g carb 26.5g protein Ingredients per 6 burrito batch: 2 cups of water (recipe calls for 2.5 but I prefer my burritos dryer) 12oz tomato paste 4 large eggs 200g (dry) pinto beans 200g (dry) brown rice 1 medium green pepper 30g spinach (I use frozen) 120g swiss cheese (4 slices of tillamook or 6 slices of most grocery store brands) 6 10inch tortillas 300g (cooked weight) meat of your choice, cooked separately. I like pulled pork - Preheat oven to 450 - Whisk eggs - Add water and tomato paste, beat until smooth - Add beans & rice, stir - Add chopped pepper & spinach, stir - Lightly grease a 13x9 baking pan - Pour in mixture, add cheese on top - Cover with foil, bake for 1hr - Let it sit & set for a little while (anywhere from 20min to 1hr) - Roll into burritos - Eat fresh or freeze. I wrap each burrito in seran wrap and freeze. When it's time to eat, I take out of freezer, replace seran wrap with a paper towel wrapped around the burrito, then microwave for 5.5 minutes My thoughts and others' thoughts: I love this because it's cheap, convenient, hits my macros with minimal thought (4 a day + protein shake + snack, though 5 a day would be cleaner; 3 a day + 2 protein shakes starting my cut in June). It has very little dishes & cleanup. For the most part people I share this with like it enough to justify the convenience, but think they get boring if you eat them too often. Changing up the meat and preparing it well goes a long ways to keeping these interesting, as does using varied hot sauces. Some people will add different spaces before baking but I've never tried that so who knows ?
